FOUNDER

Paul Hopper has always been at home with food: a vocation that began early in the kitchens of his parents’ Hartlepool hospitality firm. A 6 year spell as a London city analyst did nothing to change his appreciation of quality or thirst for variety. Seeking a change, he travelled to Vietnam in 2012, and found more than he was looking for: incredible food as a way of life, the cornerstone of a vibrant and resilient community. The next step became clear: Paul returned to the UK inspired to share a new way of eating with the inhabitants of the square mile and beyond – and HOP was born.

Passionate about good food as both consumer and industry specialist, strategic consultant Monique brings 20 years commercial experience in high end food service and retail sectors to the HOP table. Monique’s particular talents are to connect and enable: known in the business as “human wd40”, her keen vision and strategy are indispensable to her exceptional clients. When she’s not cultivating the next generation of food talent, Monique is in regular demand as a speaker and media contributor. She’s also a big fan of our summer rolls.

JOSH WYSE

NON-EXEC DIRECTOR

Making it happen on the ground, operations advisor Josh is a master of uniting space and strategy. With 25 years in the retail hospitality industry including brand evolution and site selection for many a familiar brand, he now deploys his diverse experience and skills as Wyse 2 Ltd, a Project Management and Consultancy Business for entrepreneurs like us (and some bigger fish besides.) Josh can’t get enough of the classic pho. Heavy on the sriracha, right Josh?
